Before Thanksgiving I promised you all the recipe to our Friendsgiving’s drink of choice… wait no longer, friends! These Sparkling Cider + Thyme Mocktails are equally festive and refreshing; the sparkle in this drink comes from a bit of club soda and the thyme comes from an easy infused simple syrup. You have to give these mocktails a go at your next holiday gathering.
I get so so excited about using fresh herbs in homemade punches and mocktails! Typically, I “forage” my herbs from the community garden behind our apartment. But I have to be honest… this thyme came from the grocery store — the brand Mariposa Farms to be exact. I do enjoy buying herbs from Mariposa Farms on occasion because they are grown locally right here in Iowa, and their thyme sprigs are so darn cute! Their greenhouses produce herbs that are distributed throughout the Midwest — check ’em out sometime!
- 4 cups apple cider
- 3 cups club soda
- ¾ cup lemon juice
- ½ cup sugar
- ½ cup water
- Fresh thyme sprigs
- Apple slices / for garnish
- Make a simple syrup: combine sugar and water in a small sauce pan and heat over medium high heat. Cook and stir until all sugar had dissolved. Remove from heat and add a few sprigs of thyme. Let cool.
- In a large pitcher or punch bowl, combine remaining ingredients and stir well. Add simple syrup to taste. Pour over ice and garnish with apple slices and thyme sprigs.

i love this! it’s hard to beat thyme in cocktails/mocktails, & i bet this would make a lovely mocktail for a baby shower brunch. your photography is gorgeous, as well. pinning for later!
