This colorful, spicy skillet pizza was inspired by a visit to the Red Barn Farm in Northfield, MN this summer. If you’ve never been to a pizza farm, you’re gonna need to get on that. Like, seriously, what could be better than a pizza farm? The amazing wood fire pizzas created there are well worth the two and half hour wait – really, they are. Just be sure to bring some light snacks to hold you over, a blanket to sit on, and deck of cards to pass the time while you enjoy an evening on this lovely farmstead.
Pulled Pork + Sweet Corn Skillet Pizza
Servings: 4 / Prep time: 15 minutes / Cook time: 15 minutes
Ingredients:
6 oz. pulled pork / cooked + shredded
1/3 cup bbq sauce + extra for drizzling
1 1/2 cups monterey jack cheese / shredded
1/2 of a bell pepper / sliced
1/4 of a red onion / sliced
1 jalapeno / sliced
1 ear of sweet corn / fresh off the cob
1 small bunch cilantro / for garnish
1. Lightly oil a large cast-iron skillet. Press pizza dough into skillet. Par-bake dough by heating it over medium heat for 7-10 minutes.
2. Spread 1/3 cup of bbq sauce over pizza crust. Top pizza with remaining ingredients, saving the cilantro and additional bbq sauce for a final garnish.
3. Broil on high for 6-8 minutes (I suggest checking on it every 1-2 minutes) until cheese is golden and bubbly. Garnish with cilantro and a extra drizzle of bbq sauce.
